The Apollo Beach Cool-Weather Calendar: What Locals Are Actually Circling Between November and New Year's

The first real sign that fall has arrived in South Shore isn't a temperature drop you'd notice in a jacket. It's the moment Tampa Bay slips under 68 degrees and the manatees start showing up in the discharge canal at Big Bend. That threshold, more than any date on a calendar, is what shifts the neighborhood into its cool-weather rhythm. And once it happens, almost everything worth putting on your fridge sits inside a compact triangle bounded by Big Bend Road, Waterset Boulevard, and Dickman Road.

If you already live here, you know the tourist version of this list. Manatee center. A few markets. A holiday parade somewhere. This is the resident version, with the addresses, the second-Saturday routines, and the newer additions that reshape how the fall actually plays out.

The Season Doesn't Really Start Until November 1

Tampa Electric's Manatee Viewing Center reopens on Saturday, November 1, and stays open through April 15. Hours are 10 a.m. to 5 p.m. daily, with the trails closing at 4 p.m. It's closed Thanksgiving, Christmas, and Easter, and it shuts early at 3 p.m. on Christmas Eve. Parking and admission are free, and the boardwalks are ADA-compliant.

That much is on the official page. What's not on the page is the mechanics of when the canal is actually full of animals.

The manatees come in when the bay drops below 68 degrees, which means the best viewing days are the mornings after a cold front, not the calendar dates people flying in from out of state pick.

On warm November weekends the boardwalks are pleasant but sparse. On the first cold snap of December, the same boardwalks can hold hundreds of manatees in the discharge canal at once, and the main parking lot fills before lunchtime. Locals watch the forecast, not the season opener. If a front is dropping bay temperatures into the low 60s overnight, plan on arriving at 6990 Dickman Road within an hour of opening.

There's a supporting reason to go this year specifically. The stingray touch tank downstairs, an 8,300-gallon exhibit run in partnership with the Florida Aquarium, was damaged in the 2024 hurricane season and has been in restoration since. The rays were returned to the center after major repairs. If your kids remember the tank being empty last winter, it isn't anymore.

A Three-Mile Triangle Holds Most of It

Here is where the geography gets useful. Once you plot the fall and holiday events people in Apollo Beach actually attend, they cluster inside a small area. The manatee center sits at the western tip. Waterset sits at the eastern tip. The Paseo Al Mar retail node sits in the middle. Almost nothing on the resident calendar requires a highway trip.

That's roughly a fall plan you could keep on one index card. What each of these is actually like, though, matters more than the dates.

The Greyson Just Gave Paseo Al Mar a Game-Day Anchor

The most significant change to the neighborhood between last fall and this one is at 6162 Paseo Al Mar Boulevard, Suite 103. The Greyson opened its third location there this spring, following the original in Palmetto and its Lakewood Ranch expansion. The build is roughly 3,500 square feet with about 160 seats inside and out, and a patio of around 600 square feet. Co-owner Russell Matthes described the layout as similar to the Palmetto restaurant, with the bar on the left as you walk in and a dining room slightly larger than the earlier build.

For residents, the practical read is this. Apollo Beach has had plenty of casual waterfront spots for years. What it hasn't really had, inside Waterset itself, is a room built for a Sunday one o'clock kickoff with a full bar, family seating, and a from-scratch menu that isn't wings-in-a-basket. The Greyson describes itself as upscale-casual, and the food side leans toward wings, ribs, salads, artisan flatbreads, and handhelds like a smoked pulled-pork sandwich and the Greyson grass-fed burger. That's a different reason to walk over from a Waterset street than the Salty Shamrock or Finn's Dockside, which are still doing what they've always done well.

If you live in Wolf Creek or one of the newer southern phases, the Waterset Boulevard extension connecting to 19th Avenue NE has already made the walk or short drive to Paseo Al Mar noticeably easier. That matters more on a Saturday afternoon in November than it does in July.

The Waterset Weekend Rhythm

Everything else on the calendar this fall runs on Waterset time. It's worth breaking down by weekend slot, because the events aren't disconnected. They're the same neighbors, moving between the same three or four spaces.

Second Saturday Mornings

Waterset Cars & Coffee runs from 8 to 10 a.m. on the second Saturday of every month at The Landing, 7012 Sail View Lane. Exotics, modern and vintage muscle, and imports are welcome, and it's built as a spectator event as much as a driver event. Coffee is free at the meet. The organizers ask attendees not to over-rev on the way out, which tells you what the neighborhood has already learned to enforce. Plan to be back home by 10:30 if you have a full day ahead.

Friday Nights in September and October

The SouthShore Sportsplex at 6110 Waterset Boulevard runs Under the Lights flag football on Friday nights in the fall, with 2026 season game dates on September 11, 18, and 25, then October 2, 9, and 23. Games run between 4:30 and 10 p.m. depending on age division. If your household isn't playing, it's still one of the busiest social nights in the neighborhood, and traffic near the sportsplex reflects it.

Thanksgiving Morning

The Waterset Turkey Trot 5K runs on the morning of Thursday, November 26. This is its tenth year. A Kids Fun Run runs alongside the main race, and the tone leans toward turkey hats and family photos rather than personal records. It benefits a charitable cause and is one of the few fall events that draws residents out of every phase of the community at once.

The First Weekend of December

The Toys 4 Tots Car Show and Market on Saturday, December 5, uses the Waterset Flag Football fields and runs as a combined car meet and holiday market. That single day tends to compress most of the neighborhood's early-December social schedule into one morning.

The Big Bend and Paseo Al Mar Corridor

One thing that has quietly changed in the last two years is how much you can get done without leaving the Big Bend Road and US-41 corridor. Groceries at the Publix at Paradise Shoppes of Apollo Beach. Healthcare and banking along Big Bend. The Waterset Boulevard extension to 19th Avenue NE, which has made the southern phases feel meaningfully closer to the retail node. A dinner reservation at The Greyson without driving north.

For an already-here reader, this reshapes the fall calendar in a specific way. The old pattern was to plan events one at a time and to accept the drive. The current pattern is that you can chain a Saturday morning cars meet at The Landing, a mid-morning boardwalk walk at the manatee center, and a late lunch on the Greyson patio without ever getting on I-75. The Turkey Trot, the December car show, and even a Friday night flag football game all sit inside the same five-minute triangle.

How to Actually Use This Calendar

A short set of rules for putting these dates on your fridge:

1. Watch the forecast, not the calendar, for manatees. The morning after the first real cold front in November is usually a better visit than opening day.
2. Second Saturdays belong to Cars & Coffee. If you're planning a birthday brunch or a soccer schedule, don't fight The Landing crowd. Move it to a first or third Saturday.
3. If you're new to Waterset and want to meet neighbors, the Turkey Trot draws more of them at once than any other single event of the year.
4. The Greyson is likely to be at capacity for the first Sunday NFL slate of the season. If you want to try it without a wait, aim for a weeknight in the first two weeks of November.
5. Park at the overflow lot at the manatee center after 11 a.m. on cold weekends. The main lot fills first and it's a short walk in either direction.

That's the resident's version of the fall, roughly November through New Year's, without the tourist-brochure filler. The interesting thing about this neighborhood right now is not that there's more happening. It's that more of it fits inside the same short drive.
